Nice job, and good catch on them using a 6th chord. But I don't think they used the jazz voicing you put in your diagrams, I think they're playing it as:
Ab6: xx6564
Bb6: xx8786
In other words, like a regular barre (xx6544), but with the pinky 2 frets up on the B string. If you listen to the instrumental part of the song at 2:13 (on the version I have at least) you can hear that pretty clearly. And I think in this context it sounds better than the jazz voicing, which is missing those high notes.
Another interesting voicing is:

Bb6: x8878x
But of course you could also just play a straight Ab and Bb (or even play it G and A if you don't like barres) and not worry about getting that 6th note in there, if any of this sounds too complicated to anyone.
