Tune up and then use a whammy pedal to lower it by an octave, that would work...

What tuning would we need for a six string? I'm a lefty so finding a seven string for me is downright impossible.

Well you can just tune up a full step on a regular six string to get the same notes an octave higher. the tuning would be from low to high F#,B,E,A,C,F# or you you can tune down to that same tuning to get the 8 string sound. (i hope this made sense)
